About us

The story of Nokedlish

Nokedlish continues the work of a hospitality family spanning several generations — a story that began long before the opening, back in the grandparents’ time.

The founder’s great-grandparents ran a pub. Hospitality was in the family’s blood from then on, passed down from one generation to the next. The grandparents also ran their own place, a pancake house next to the Uránia cinema in the 1980s and 1990s — in its day a popular meeting point in the neighbourhood.

The father grew into the trade in that same pancake house — from childhood it was simply part of his everyday life. After graduating from catering college he worked at a renowned hotel in Buda and at a respected restaurant, learning the foundations of the craft at the highest level.

An idea took hold in the father that he carried with him for years: a nokedli machine you simply drop the ingredients into, and the nokedli makes itself. He kept repeating the thought, until one day the founder suggested: a machine is very hard to build — let us first see whether people even want to eat nokedli at all. Let us open a nokedli house.

That is how Nokedlish was born in the spring of 2024, on Vas utca: the first nokedli house in Hungary, and perhaps in the world. A place where nokedli — the traditional Hungarian side dish — could finally become the main character, in street food form, with the family knowledge and passion behind it that has been passed down for four generations.

Recipe story

A lucky accident: Nock'N'Cheese

The cheese sauce stayed in the pan too long — and that is exactly what made it one of the most popular dishes of the house.

Read it

Nock'N'Cheese was born out of a lucky accident. The idea started from the classic mac and cheese: we wanted to create a nokedli with a really characterful cheese sauce.

During development we once left the cheese sauce and the nokedli warming together in the pan for too long — and that is when the magic happened. The cheese crisped up underneath, while the top stayed silky and stretchy.

That is how Nock'N'Cheese came about: crisp and stretchy at once, a mistake that has been one of our most popular dishes ever since.

Family recipe

The Vadas that came from the family table

Matzo ball soup, leftover soup vegetables — and a sauce that is still a shared family favourite.

Read it

Vadas made it onto the menu from Ádám’s childhood — it was a regular at the family table.

Broth was cooked often in the family, and the kind worth coming home for: Ádám’s mother made a famously good matzo ball soup, the main course at every larger family occasion. And from the leftover soup vegetables, vadas practically made itself.

Vadas has been a shared family favourite ever since — and that is what we decided to share with our guests.

Recipe story

The Paprikásh that took its time

At first we deliberately avoided it. Then guests kept asking until we had our own version.

Read it

When Nokedlish opened, we deliberately avoided the dishes that are classically served with nokedli. There was only one exception: nokedli with egg was simply impossible to leave out.

Our guests, however, thought differently. In the Vas utca shop the question came up again and again: when will there finally be paprikás or pörkölt? Many hold that nokedli is only worth eating with stew — and that is exactly what we wanted to disprove. And we did: the tomato, the vadas and the creamy spinach nokedli quickly became guest favourites.

Paprikásh only made it onto the menu with the Dob utca opening — and it is no accident that it took so long. Every household does it differently, and everyone believes their own recipe is the best. We kept experimenting until our own, tastiest version was born.
